Happy FriYAY, folks! I have one thing on my mind for the weekend. This Chunky Mango Guacamole!
Let’s back up for a second. I took Thursday off from my 9-5 to catch up on some things and ended up spending more time thinking about food and what to try next. It might be a problem. Lately, new recipe ideas and ones I want to try are all I can think about. Maybe it’s a sign to really follow that passion or something. Of course, with constant foodie thoughts, comes more deliciousness headed your way.
I love snacking. Like all day, every day! And then some. Summer is my favorite snacking season (is that a thing?) because of all the juicy fruit and crunchy veggies. It’s so easy to find berries, peaches, and so many other glorious fruits to turn into something extra special to snack on. Last week was peaches, this week was mango.

And since guacamole is always welcome in my house, this Chunky Mango Guacamole only made sense. It has all the classic guac flavas with a hint of juiciness from large bits of orange goodness. It took all of 5-10 minutes to put together. Simple recipes are my favorite sometimes.
Can we just talk about guacamole all day? K thanks…. Personally, I haven’t met too many guacs that I haven’t liked but my favorite kinds are the super chunky. I want to be able to taste each ingredient and really get a good scoop on my chips. Or my toast. Or my taco. Or on a spoon. I’ll put it on anything.
Speaking of chips. Have you tried these tortilla chips from RW Gracia?! I LOVE them! Honestly, I just picked the first blue chip I could find at the store for my guacamole and was so so so happy when I ate them! They have the perfect amount of salt and a slight hint of lime that makes my mouth water. Not to mention, they are non-GMO and family run right here in North Carolina. Win Win!!
Anyways, enough about my new favorite chips (seriously, tho, you should try them). Back to this guac. It’s super light, refreshing, and the best cool snack for those hot summer days. Try it and let me know what you think!

Ingredients
- 1 Avocado
- 1 Mango
- Zest of 1 lime
- Juice of 1 lime
- 1/8 cup finely chopped onion
- 1 teaspoon salt
- 1 tablespoon chopped cilantro
Instructions
- Cut the avocado and mango into chunks. Try to keep them a similar size so that there's consistency in the dip.
- Add them into a bowl with the zest and juice of a lime, onion, cilantro and salt.
- Mix together and let sit for 5-10 minutes so that the flavors can come together.
- Serve on chips or whatever your heart desires and enjoy!
