Paleo Egg Muffins to start off the week? Yes, please!
Ohh meal prep…so good in theory, so hard in reality…at least for me. But this week, this week was different! With a little determination, some planning, and a few lists, I have the majority of the meals for the week ready to go or half way done.
The first thing that came to mind when I decided to prep for the week was breakfast! I’m a HUGE believer in breakfast. No, seriously! If I don’t eat something within like 20 minutes of waking up, I get hangry and no one likes that. Any other breakfast lovers out there?
And since breakfast is a must for me, these Paleo Egg Muffins were perfect. Yummy, veggie packed and portable, what more could a girl want?
I picked red peppers (so sweet & pretty!) and kale because I feel like it holds up to cooking a little more than spinach. These are totally customizable, so you can put in any type of veggies (or meat) that tickle your fancy. I’d say stick to 2-3 extras to make sure you have just the right amount of eggs and veggies or meat. It’s all about balance.

The key to any sort of meal prep for me is simplicity and deliciousness. Taking forever to cook or bland flavors = no beuno! These took me 30 minutes flat and that includes 20 minutes of cooking…so really that’s only like 10 minutes, right? 10 minutes for a weeks’ worth of breakfast, I’m soooo down for that!
Easy, peasy, lemon squeezy! Get to it, peeps!!
Paleo Egg Muffins
Ingredients
– 8 Eggs
– 1/2 cup Almond milk (or milk of your choice)
– 1 Red Pepper
– 1.5 cups of Kale
– 1 tablespoon Basil
– 1 tablespoon Parsley
– Salt & Pepper to taste
Directions
1.) In a bowl, whisk together the eggs, milk, basil, parsley, salt and pepper.
2.) Dice the red pepper and chop the kale into small pieces.
3.) Add the red pepper and kale into the egg mixture.
4.) Scoop the eggs into a muffin tin that you’ve sprayed with cooking spray.
5.) Bake at 350 for 20 minutes or until the muffins are cooked all the way.
6.) Enjoy while hot or store in an airtight container for an easy breakfast throughout the week.
