A fresh berry dessert is the best way to enjoy summer and this Blackberry Crumble with Chai Ice Cream is no different. From the super sweet blackberries to the (slightly healthy) crumble top full of oats, seeds and a hint of brown sugar, it’s something that could be eating every. single. day!
For this recipe, I went with blackberries found at the local farmers’ market. How could I not? Look at all that juicy, plump deliciousness. Seriously, they were huge and absolutely perfect…I had to go back and get a 2nd pint because I kept snacking on them before I got to the actual crumble.

Blackberries were an obvious choice since it’s peak season for them in North Carolina. However, this recipe is highly customizable with whatever berry or fruit your heart desires. Peaches? Blueberries? Apples? They’ll all be scrumptious. Make it your own and let me know which one is your favorite.

Now, that being said, this dessert also has its fair share of crunch and natural sugar to bring it to the next level. With hints of brown sugar and pure maple syrup, you better believe it’ll satisfy any sweet tooth you might be having. Combined with the creamy Vegan Cashew Chai Ice Cream, it’s a match made in heaven.
Back to that crunchy topping. Mmmm! I’m a sucker for texture and always need a little sumthing sumthing to give a crunch to a dish. The best part? This one sneaks in some healthy ingredients like hemp hearts and flax seeds for some extra protein and omega-3s. Trust me, if I didn’t tell you, you never would have noticed. Moral of the story…this dessert is (kinda) healthy, right? I mean you have fruit, whole grains (oats), and nutritional boosters like the seeds? Swap out the ice cream for yogurt and you might even be able to call this breakfast. Maybe tomorrow…

Ingredients
- 4 cups blackberries
- 1/4 cup maple syrup
- 2 tsp vanilla
- 1/4 cup vegan butter, melted
- 1 cup rolled oats
- 1/4 cup brown sugar
- 1 tbsp ground flax seeds
- 2 tbsp hemp seeds
- 1 tsp cinnamon
Instructions
- Preheat the over to 350.
- Combine the blackberries, maple syrup and vanilla in a bowl and set aside.
- In another bowl, add the oats, brown sugar, flax seeds, hemp seeds and cinnamon. Mix together well.
- Drizzle in the melted vegan butter and stir until the oat mixture becomes a crumble consistency.
- In two ramekins (or an 8X8 pan), pour the berries into the bottom of the pan. Top with the crumble topping.
- Bake for 15-20 minutes until the topping is golden brown.
- Serve immediately or at room temperature with the Vegan Cashew Chai Ice Cream linked in post.
