I love nut butter, more than I probably should. Peanut Butter is my favorite by far but almond butter, cashew butter, sun butter…you name it, I want it. Ok, sun butter is a seed butter but you get the gist. Not that it’s out of the norm but lately, I’ve been craving peanut butter like crazy – maybe I need more protein in my diet? Enter Peanut Butter & Chocolate Protein Balls.
While carrying around of jar of PB and spoon so I can eat it whenever I want sounds like heaven to me, it also attracts a few too many stares. So in the meantime, any on-the-go peanut butter recipes have been my life for the past couple of weeks. This includes simple things like graham crackers and peanut butter and a number of PB granola bars. My favorite snack so far are these Peanut Butter & Chocolate Protein Balls.
Now I say chocolate but it’s a slight hint and not overpowering at all. Almost like a very mild peanut butter cup. Want more chocolate (I mean who doesn’t!)? Not a problem. Just take out the PB2 and add in some mini chocolate chips or coco powder. Easy Peasey!
These little bundles of deliciousness have been my saving grace for a quick jolt over the past few weeks. Grabbing them on my way out the door or munching on one as I make an actual meal (you know, to keep me from nomming on cookies before dinner), they’ve been perfect for satisfying my peanut butter needs and keeping me full. No matter when you have them, they’ll do the trick. Being super portable, these will be making their way into a munchy bag for long car rides and hikes in the near future.

Before I get too carried away, whip up a batch yourself!
Peanut Butter & Chocolate Protein Balls
Ingredients
– 1/4 cup of crunchy peanut butter
– 1 tablespoon PB2
– 1 scoop of your favorite chocolate protein powder (I used Body Fortress)
– 1/3 cup quick oats
– 1 tablespoon ground flax seeds
– 1 tablespoon chia seeds
– 1/4 cup pure maple syrup
Directions
1.) Place all of the ingredients except the maple syrup into the food processor and start mixing.
2.) Slowly pour in the maple syrup while the food processor is on.
3.) Once the mixture is all blended together, take a small scoop or spoon and roll it into balls.
4.) Enjoy a few and store the rest in an airtight container for when you need a pick me up
